|  | Beauceron Maple FestivalThe Beauceron Maple Festival celebrates the traditional production of the region's maple syrup. Part of the cultural heritage of the Beaucerons, syrup-making not only lays in a store of the aromatic, sweet stuff, it also heralds the welcome return of spring. For ten days the town of Saint-Georges celebrates with a mixture of food fairs, parades, music and, of course, stand after stand of delicious syrupy pancakes.In March and April, syrup makers drill holes in the maple trees around one metre above the ground, tapping in a collection spout with attached bucket or bag. Sap flow will not occur every day of the tapping season, only when a morning warms rapidly after a freezing night. Each tree produces up to 12 gallons (50 litres) of sap in a season. The sap is then boiled down to syrup. Maple syrup is one of the oldest traded commodities in North America and when served on a steaming stack of pancakes it's easy to see why... |
