Sausage Peppers & Onions

A hearty, one-pan dinner loaded with big flavors. Serves 4.

Few dinners feel more comforting than a skillet filled with sizzling sausage, peppers, and onions. As everything cooks together, the savory smell of browned sausage, tender potatoes, and the sweet veggie mixture makes the whole kitchen feel warm and inviting. This easy one-pan dinner is hearty, budget-friendly and full of familiar comfort-food flavor. With minimal prep and easy cleanup, it’s a great option for busy evenings when you want something filling, flavorful and cozy without a lot of extra effort.

 

Ingredients

  • 12–14 oz smoked sausage, sliced
  • 2 cups sliced peppers and onions (fresh or frozen)
  • 1 lb diced potatoes
  • 2 tablespoons neutral cooking oil
  • Salt & pepper to taste
 

Instructions

1. Cook your potatoes. Preheat a large skillet over medium-high heat and add oil. Toss in the potatoes. Add a splash of water, cover, and cook for 8–10 minutes. Stir occasionally, until they begin to soften.
2. Add the sausage. Add the sliced sausage and cook uncovered for 4–5 minutes until everything begins to brown at the edges.
3. Add the vegetables. Stir in the peppers and onions. Cook for another 5–7 minutes until everything is tender.
4. Heat the green beans. Warm in the microwave (or add to the skillet for the last few minutes to heat through).
5. Season and serve. Season with salt and pepper to taste and serve hot.
