Ingredients

  • 2 cups frozen Potatoes O’Brien (with peppers and onions)
  • 1 lb ground breakfast sausage
  • 6–8 eggs
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Burrito-sized flour tortillas
  • Salsa or pico de gallo
 

Instructions

1. Heat the skillet. Preheat a skillet over medium-high heat. Add the breakfast sausage and cook until browned and fully crumbled.
2. Add the vegetables. Add the frozen Potatoes O’Brien directly to the skillet with the sausage. Cook together until the potatoes are heated through and lightly browned. The sausage fat helps crisp the potatoes and adds extra flavor. Optional: Season with salt and pepper if you have them on hand.
3. Scramble the eggs. Reduce heat to low. Crack the eggs into a bowl and scramble, or crack them directly into the skillet if you’re keeping dishes to a minimum. Stir gently and cook until the eggs are just set.
4. Assemble the burritos. Divide the filling among tortillas. Top with shredded cheese and salsa or pico de gallo, then wrap tightly.
5. Toast for extra flavor. This step is optional, but for some added texture, place wrapped burritos back into the skillet seam-side down and toast briefly on each side until lightly golden.
