BBQ Chicken Loaded Potatoes

Loaded baked potatoes are a classic comfort food that can be a little time-consuming the old-fashioned way, but this "un-baked" version makes it easy to enjoy them without needing an oven! Using your extended stay kitchen's microwave and stovetop, you can create a warm, satisfying meal that feels indulgent, while simple to prepare. All it takes is a skillet and some creativity! Topped with BBQ chicken and melted cheese, and piled high with your favorite toppings, these loaded potatoes are a great way to turn a few affordable ingredients into a hearty dinner.
Ingredients
- 4 baking size russet potatoes
- 2 cups cooked shredded chicken (rotisserie or canned)
- Your favorite BBQ sauce
- 1 cup shredded cheddar cheese
- Green onion and sour cream for topping
Instructions
1. Cook your potatoes. Wash, dry, and pierce each potato 5-6 times with a fork. Microwave on high for 5-8 minutes, or until tender. Be sure to turn them halfway through.
2. Make the BBQ chicken. In a skillet over medium heat, combine the chicken and BBQ sauce. Cook until heated through.
3. Assemble. Slice open each potato lengthwise and fluff the inside with a fork. Top with the BBQ chicken and shredded cheese.
4. Melt and serve. Return to the microwave for 30–60 seconds to melt the cheese. Add the optional toppings and serve hot.
